2) CHINESE CHEF
BASIC FUNCTION OF THE POSITION:
The Chinese Chef will be responsible for preparing authentic Chinese cuisine for MMG Khoemacau mining camp, ensuring safety satisfaction, food safety compliance, and integration of culturally appropriate menu planning into the existing catering service.
MAJOR DUTIES AND RESPONSIBILITIES:
Your key accountabilities include:
– Planning and preparing a variety of Chinese dishes, including regional specialties.
– Ensuring all meals meet hygiene, nutritional, and taste standards.
– Training and supervising kitchen assistants on Chinese cooking techniques.
– Maintaining inventory of Chinese ingredients and liaising with procurement for specialty sourcing.
– Upholding cleanliness and sanitation of food preparation areas in line with hygiene standards.
– Monitoring food portioning, presentation, and waste management.
MINIMUM QUALIFICATIONS AND EXPERIENCE REQUIRED FOR EFFECTIVE PERFORMANCE:
– Diploma or Certificate in Culinary Arts/ Professional Cookery (Specialization in Chinese cuisine preferred).
– Diploma in Food Safety and Hygiene (HACCP preferred).
– Demonstrated experience preparing authentic Chinese cuisine: at least 3 years focus on Chinese cuisine in a high-volume kitchen (e.g. hotel, mine camp, industrial catering, or large restaurant).
– Basic First Aid & Occupational Health and Safety awareness is an added advantage.
– Experience producing a wide range of authentic Chinese dishes (regional cuisines such as Sichuan, Cantonese, Hunan, etc.).
– Experience working in multicultural environments, preferably in remote or camp settings.
– Strong knowledge of authentic Chinese cooking techniques (wok cooking, steaming, roasting, stir-frying, dimsum preparation, etc.).
– Effective communication skills in English (Mandarin or Cantonese an added advantage).
